Nothing beats sticky BBQ ribs when you've got a group to feed - guaranteed to impress!
INGREDIENTS
2 sides American style pork ribs (1.7kg)
1 tablespoon instant coffee powder
¼ cup (60ml) warm water
1 cup (250ml) tomato sauce
¼ cup (60ml) Worcestershire sauce
¼ cup (60ml) honey
¼ cup (55g) brown sugar
¼cup (70g) American mustard
2 cloves garlic, crushed
1 teaspoon smoked paprika
½ teaspoon chilli powder
Place ribs in large non-reactive dish.
Combine coffee powder and water in large bowl; stir until dissolved. Add remaining ingredients and stir well to combine. Pour over ribs and turn to coat in marinade. Cover, refrigerate 3 hours or overnight.
Heat BBQ to medium heat. Cook ribs on grill or flat plate, as desired, 5 minutes each side before transferring to warming racks. Meanwhile, transfer remaining marinade to small saucepan. Bring to a boil over medium heat until it comes to a boil; boil 2 minutes.
Cover BBQ with lid, or cover ribs with foil and cook, over medium heat a further 30 minutes or until cooked through.
Rest, covered, 10 minutes. Before cutting into individual ribs and serving with warm BBQ sauce.
Serve with a green salad if desired.
